Aji or chili is how red pepper is normally known in almost all of South America and part of the world. There are hundreds of varieties, which can be spicy or sweet to a greater or lesser extent and which -for further confusion- are mixed with the different ways of calling the varieties: cayenne, chilli, pepper, with all their sub-varieties.
Here we offer you the tasty ball pepper dried, crushed and sieved in small flakes of 2-3 mm. In this format it is a fundamental ingredient in many recipes and sauces, such as chimichurri sauce. In addition, it can also be used as we would do with paprika, to add it to boiled potatoes, a fried egg, etc. With the advantage that, since it is not powdered, when it is used for cooking it will not burn as quickly, nor does it color the dish so much red, which can sometimes be an advantage.
